ORANGE CARDAMOM BUTTER COOKIES

ORANGE CARDAMOM BUTTER COOKIES

Inspired by a Norwegian recipe, these delectable butter cookies with carmelized sugar edges will melt in your mouth. 

INGREDIENTS

  • 9 tbsp butter – softened
  • ½ cup powdered sugar
  • ¼ cup granulated sugar
  • 2 tsp vanilla
  • 2 tbsp orange juice
  • 1 tbsp orange zest
  • ¼ cup Cream of the West Organic Roasted Wheat
  • 1 1/3 cup flour
  • 2 tsp ground cardamom

DIRECTIONS

In a large bowl, cream butter, powdered sugar, granulated sugar, vanilla, and orange juice, mixing well after each addition.
 
In a separate bowl whisk together dry ingredients and add slowly to creamed mixture. Mix just to combine.
 
Roll the dough into a log on a sheet of waxed paper. Wrap with plastic wrap and chill in the fridge for 1 hour.
 
Preheat oven to 3750 and roll the chilled dough in granulated sugar. Slice across the log into ¼ inch disks. Placing slices on baking sheet lined with parchment paper.
 
Place on rack in center of oven. Bake at 3750 for about 18 minutes, or until tops are slightly golden.
 
Cool on baking racks. Store in airtight container.
