CREAM OF THE WEST RANCH OAT FUDGE

CREAM OF THE WEST RANCH OAT FUDGE

A wonderful lunch box or after school snack!

 

 INGREDIENTS:

  • 4 cups Cream of the West Roasted Ranch Oats
  • ¾ cup semi-sweet chocolate chips
  • 1 cup brown sugar
  • ½ cup corn syrup
  • ½ cup butter or margarine
  • ½ cup evaporated milk
  • ½ cup peanut butter
  • 1 tsp. vanilla

 

DIRECTIONS

Run oats through blender, one cup at a time, on chop until they are fairly fine. Place in a large bowl, add chocolate chips and mix well.

Place butter, sugar, corn syrup, evaporated milk and peanut butter in a 3 – 4 quart saucepan over medium-low heat. Stir until melted and smooth. Increase the heat and bring to a full boil for one minute, stirring constantly.

Remove from heat and stir in vanilla. Next, stir in dry oat and chocolate chip mixture. Mix well. Pour into a lightly grease 9 x 9” pan. Allow to cool, then place in refrigerator until firm enough to cut into squares.

Store in refrigerator until ready to eat.
