This delicious breakfast bake tastes just like an orange dreamsicle on a hot summer day. Made with Cream of the West Roasted Ranch Oats for a chewy, never soggy, delicious, nutritious way to start the day. Can be put together the night before and baked in the morning!

This delicious breakfast bake tastes just like an orange dreamsicle on a hot summer day. Made with our Roasted Ranch Oats for a chewy, never soggy, delicious, nutritious way to start the day. Can be put together the night before and baked in the morning! Also great as an after school snack! 🍊

Ingredients

Baked Oatmeal:

  • 2 eggs
  • 1/3 cup pure maple syrup
  • 1 ¼ cup unsweetened milk (or milk of choice)
  • 1/2 cup freshly squeezed orange juice
  • Zest from 1 large orange
  • 1/2 Tbsp vanilla extract
  • 1 Tbsp melted butter or melted and cooled coconut oil
  • 2 cups Cream of the West Roasted Ranch Oats
  • 1 tsp baking powder
  • ¼ tsp salt

Orange yogurt topping:

  • 2 Tbsp plain or vanilla greek yogurt (or sub dairy free yogurt or softened cream cheese)
  • 1 Tbsp powdered sugar (or you can sub maple syrup or honey)
  • 1-2 tsp fresh orange juice, to thin
  • ½ t tsp orange zest
  • ¼ tsp vanilla extract

Directions

Preheat oven to 350. Grease a 9 x 9” pan and set aside.

In a medium bowl, beat together eggs, syrup, milk, orange juice, and zest, vanilla extract and melted butter or oil. Mix well.

Add dry ingredients to bowl and stir to combine.

Add mixture to prepared pan.

Bake 50 – 55 minutes, until edges are slightly browned.

Remove from oven and cool on a rack for 15 minutes.

Meanwhile, prepare the yogurt glaze by whisking all glaze ingredients together in a small bowl.

Before serving drizzle Oatmeal Bake with glaze.

Leftovers can be stored in an airtight container in refrigerator or divided into servings and frozen.
